Hollandaise sauce ( or ; from French sauce hollandaise [sos ɔlɑ̃dɛz] meaning "Dutch sauce") is a mixture of egg yolk, melted butter, and lemon juice (or a white wine or vinegar reduction). It is usually seasoned with salt, and either white pepper or cayenne pepper.
