Basbousa (Arabic: بسبوسة, romanized: basbūsah) is a sweet, syrup-soaked semolina dessert popular throughout the Middle East and North Africa. The semolina batter is baked in a sheet pan, then sweetened with sugar syrup and typically cut into diamond (lozenge) shapes or squares.
